AROMA: Candied dark cherry, sweet grass
TASTE: Concentrated dark fruit, foraged blackberry

COMPOSITION: 67% 2015 Petite Sirah, 33% 2016 Zinfandel, both from Lodi
PAIRING: A blend of Petite Sirah and Zinfandel, Be Kind will pair beautifully with lamb. Leo, our Vice-President, shares a lovely recipe below.
4 ounces soy sauce
2 ounces olive oil
4 ounces sesame oil
1/4 cup parsley, chopped
3 cloves garlic, chopped
1 Teaspoon thyme
1/2 teaspoon rosemary, chopped
1/2 teaspoon dry mustard
1 teaspoon oregano
1 cup red wine, Be Kind
1/2 cup reserve marinade
Combine soy sauce, olive oil, sesame oil, herbs, garlic, and dry mustard. Stir to combine then add the leg of lamb. Marinate overnight.
Remove lamb from marinade and let it come up to room temperature. Season with salt and pepper.
Turn your grill on high. Sear all sides of the lamb, basting it with the marinade periodically. Turn the heat down to medium and roast until an instant-read thermometer reads 125 degrees for medium rare. Remove from the grill and let the lamb rest, covered, for 30 minutes. Grill times will vary based on the size and shape of the lamb.
Combine ½ cup of reserved marinade with 1 cup of Be Kind red wine. Cook over medium heat and reduce by half until the consistency is that of a glaze.
Thinly slice the lamb and drizzle the glaze over it. Enjoy!
