Kairos is a Greek word synonymous with Chronos, a term that usually means “the crucial time,” “the decisive time,” that time when everything flows together and an opportunity exists that can never beseized again. The organically farmed and certified Kairos Vineyard is adjacent to our winery on a gentle hillside slope facing south. In 2001, new vines were planted in soil that is well drained with gravelly loam to a depth of 30 inches. We were delighted with the first fruit we sourced from this vineyard in 2007 and have tasted even more depth, concentration, and vibrant fruit character from every vintage subsequently produced.
A seamless year of steady, seasonal weather resulted in above average yields and excellent quality grapes. A warm, dry spring brought early bud break, which helped with canopy vigor and berry size and created ideal conditions for flowering and fruit set.With the exception of one heat spike in late June/early July, temperatures were consistently in the zone for optimal vine activity, resulting in notably healthy vines as fruit went through veraison and started ripening.
This full-bodied, bold wine shows great structure, with aromas of black currant, black cherry and hints of green olive. From the 35 months in French oak, vanilla, sweet wood and smoke are also imparted on the wine. These layers upon layers of unique flavors along with a long, smooth finish will not only linger on your palate, but in your memory as well.
Simply season Prime Rib with salt, pepper, and fresh garlic. Serve medium rare with a side of twice cooked baked potatoes and a fresh green vegetable. This meal, along with Judd’s Hill Kairos Cabernet Sauvignon will be the benchmark for your future wine and food pairings.
